While this isn’t the most beautiful recipe I’ve created, I’ll be damned to say that it’s not among the best tasting. These are simply delicious. They’re like jalapeno poppers but on steroids.

I’d love to enjoy the filling all by itself, using an ice cube, but I would prefer to scoop it into a jalapeno halved, wrapped with bacon, and baked—it’s more delicious!

Ingredient Notes

  • Jalapenos: Pick fresh, firm jalapenos that have no blemishes.
  • For breakfast sausage, you are able to alter the heat of the filling in a variety of ways according to the Sausage you pick. Choose mild, moderate, medium, or hot, according to your preferences. I would not recommend the maple or sage sausage for this recipe. Stick with a simple pan sausage. The Jimmy Dean and Tennessee Pride brands are fantastic.
  • Bacon – To get accurate results, it is recommended to use an extremely thin breakfast bacon, such as Smithfield Brand’s Hometown Real. Market bacon that is thick cut is too heavy and won’t cook as fast as the chili peppers.
  • Sharp cheddar and cream Cheese: I typically make use of extra sharp Cheddar to get the best flavor.
  • Green Onions – You’ll be amazed at how much some green onions add flavor to the dish!
  • Optional garnishes include ranch or sour cream dressing. The garnish is not required, but it’s so delicious, and dairy can benefit from reducing the temperature. Plus, everyone likes dips, don’t they?

 

How to Make Sausage Stuffed Bacon Wrapped Jalapenos

  • Prepare a baking tray with foil or parchment and set it aside. Preheat the oven to 425 degrees.

 

Cook the Filling

  • In a medium non-stick pan, cook the Sausage and green onions on medium-high heat, breaking the Sausage as you go.
  • Take the pan off the hot heat and add the cream cheese cubes and the grated Cheddar. Cover the pan and set aside while you cook the jalapenos. This allows the cheese to soften and melt, making it much easier to mix with the onion and sausage mixture.

Prepare the Jalapenos

  • Slice the jalapenos lengthwise, then remove the membranes and seeds.

  • At this point, the cheeses should have softened. Mix the cheese and Sausage until well-mixed.

 

Variations/Options/Substitutions

  • We prefer our sausage-stuffed jalapenos to be reasonably mild, but should you wish to kick it up, consider using spicy breakfast sausage for the filling. A few pinches of pepper flakes can also kick it up.
  • To make the dish as light as it can be, you can substitute mini sweet peppers with the jalapenos.
  • Explore a different version using sweet Italian provolone and Sausage for Cheddar.
  • Variate the flavor by adding pepper jack, Monterey jack, or Swiss cheese. You can also add fresh herbs like parsley, basil, or thyme.

 

Storage and Reheating

Reserving leftovers in a tightly sealed container and keep them in the fridge for up to 3 days. Jalapenos stuffed with Sausage can be cooked in an oven at 250 ° for approximately 10-12 minutes or in an air fryer at a temperature of 300 for 3-4 minutes.
